Ottocento Negroamaro I.G.P. Salento

Our grapes are harvested by hand at the end of September in our vineyards in Salento, trained with the Guyot system. The density is 4,500 plants per hectare, with a production of about 2,500 g per plant.

At controlled temperature in steel vats

The wine, of an intense ruby ​​red color, presents itself to the nose with a fresh bouquet reminiscent of small berries. Full and round on the palate, maintains structure and fruit sweetness without sacrificing freshness and roundness.

Traditional meat first courses, knife point sausage from Alta Murgia, meatballs with sauce, grilled lamb, horse meat in tomato sauce, homemade pasta such as sagne ‘ncannulate, for example, soup of chickpeas or with gnomerelli which are traditional rolls made with offal.
