Ottocento Minutolo Valle D’itria I.G.P

Our grapes are harvested by hand at the end of September in our vineyards in Valle D’Itria, trained with the Guyot system. The density is 4,500 plants per hectare, with a production of about 1,700 g per plant.

At controlled temperature in steel vats

Brilliant straw yellow color, fruity aromas reminiscent of yellow peach and ripe apricot combined with hints of orange blossom and hawthorn and delicate salty nuances. In the mouth the fruity notes appear but are balanced by a fresh mineral vein. Rich, with a lingering finish.

Shellfish and sushi. White fish, sea bream, snapper cooked in the oven with black olives, capers, oil and vinegar. Excellent on fried “paranza”. It should be served at 10-12° C
